Seahawk; Southern Pig Roast Hospitality

Welcoming hospitality is always a part of a charter on board the 87′ Little Harbor Sailing Yacht, Seahawk. Robert Edgar, the Captain of Seahawk hails from Wrightsville Beach, North Carolina and adds a touch of warm southern hospitality to the mix. Here in Newport, we all had a taste of this hospitality, when Robert and the rest of the crew of Seahawk treated us all to a true Southern Pig Roast, before they sailed out of Newport Harbor for the winter season in the Caribbean.

To accomplish a Southern Pig Roast in New England, Robert filled a larger portable grill roaster oven with a 90 pound pig and 24 chickens and hauled it down Lower Thames Street in Newport to a lovely spot across from Harbor Court, the Newport Station of the New York Yacht Club. We had a true feast and a lovely afternoon saying good bye to Seahawk after a great summer season.

Cooking a 90 pound pig is an all day affair, requiring careful tending and basting for succulent pork and cracklings. The chickens were all slathered with a special barbecue sauce as well and served alongside the roasted pork. Along with the slow roasted pork and chicken were homemade corn bread, coleslaw and baked beans. Robert slow cooked the baked beans alongside the pig, seasoning the beans with some of the pork fat drippings. And no pig roast is a Southern Pig Roast without collard greens, which again Robert made himself in the traditional long cooked way complete with pork fat drippings and a little hot sauce. As we were still in New England, on the side was a raw bar of fresh shucked little neck clams and oysters for homage paid to a taste of Rhode Island.

Robert and the crew of Seahawk may not be able to roast a 90 pound pig on board for your charter, however you can rest assured that the same heartwarming southern hospitality will welcome you on board, no matter where you cruise. We were certainly spoiled, and Robert and his crew look forward to spoiling you too.
